Boondi Shrikhand Parfait, a combo of two Indian desserts to celebrate Bijoya Dashami.

Boondi or Bonde (in Bengali) is a simple dessert made of gram flour or chickpea flour and soaked in sugar syrup. Shrikhand is a Gujrati dessert made with hung curd and sugar. To make the parfait I have combined these two. Give it a try to surprise your family this Bijoya Dashami and you won't regret.
Bijoya Dashami is celebrated with great enthusiasm as Bengali community bids farewell to Maa Durga after 5-day long celebration. To celebrate the occasion people hug near and dear ones and touch elders feet to show respect and wishes everyone for a happy healthy life. No Indian celebration is complete without sweets and Bijoya Dashami is not an exception. To celebrate Bijoya Dashami Bengalis make (or buy) different kind of sweets like naru, bonde, nimki, goja, misti-doi, rasogolla, sondesh and many more. This year situation is little different because of the pandemic but we can still enjoy with our family and pray to Goddess Durga that everything becomes normal soon.
I'm a huge fan of layered desserts. Parfaits are custard based layered French desserts served in tall glasses. I have given this French dessert a twist and made this parfait with boondi and shrikhand, two famous Indian desserts. As I'm making this parfait with boondi and shrikhand made the portions small. If you have a big sweet tooth can make it in a tall glass 😀. I have used homemade shrikhand and boondi. But store bought will work fine too.

Here is how to make it:
Boondi Shrikhand Parfait
Prep time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes
Yields: 2 servings
1/2 cup Shrikhand (Mix 1/2 cup hung curd + 2 Tbsp powdered sugar + pinch of cardamom powder)
1/2 cup Boondi (homemade or store bought)
Few pistachio for garnishing
In a shot glass or small serving jar make a layer of boondi.
Fill the shrikhand in a pastry bag.
Make a layer of shrikhand on top of boondi layer. I have used a pastry bag to layer shrikhand as I find it easy to do. But can be done with spoon too.
Repeat the layers till you reach the top of your glass.
Garnish with some chopped Pistachio.
Make all the parfait similarly.
Serve immediately or keep in refrigerator to serve later.
Here is how to make it step by step:
Make shrikhand and keep refrigerated.
Arrange everything to make the parfait. Fill the pastry bag with shrikhand if using.
Make the layers.
Garnish and serve.
You can prepare the boondi and srikhand a day before and assemble just before serving.
Prepare the parfait and keep refrigerated till you serve.
Double or triple the quantity of ingredients as per your need.
