Banana Chocolate Chip Muffins| A great way to use up over ripe bananas.

Do you have over ripe bananas and you feel sorry to throw them in the trash? Please don't throw them. Over ripe bananas are a baking opportunity. Whenever you have them just put on your apron take some basic ingredients from your pantry and create some magic baked goodies to enjoy with your family. Just like this one - Banana chocolate chip muffin, a super easy one bowl recipe. Make them and enjoy as breakfast or dessert or teatime snack.

Ingredients needed for this recipe are very basic and easily available in every pantry, like flour, sugar, salt, milk, butter, baking powder, baking soda, vanilla essence, egg and over ripe bananas, no fancy ingredients needed. And yes more ripe the bananas are the better flavour you will have.

  • Maida or all purpose flour 200 gm (1 and 1/2 cup)

  • Fine granulated white sugar 150 gm (3/4 cup)

  • 2-3 over ripe bananas (1 cup mashed banana)

  • 1 large egg

  • Baking powder 1 and 1/2 tsp

  • Baking soda 1/2 tsp

  • Salt 1/4 tsp

  • Unsalted butter 100 gm

  • Milk 1/4 cup (60 ml)

  • Vanilla essence 1 tsp

  • Chocolate chips a handful


  • Shift maida, baking powder, baking soda and salt together and keep aside.

  • With a fork mash bananas and keep aside.

  • In a big mixing bowl cream butter and sugar until sugar melts.

  • Add mashed banana and vanilla essence. Mix it well.

  • Add egg and give it a mix. At this point the mixture will look curdled. Don't worry. Once you add the flour it will be ok.

  • Now add flour and milk alternately in batches and mix to make a batter.

  • Stir in chocolate chips.

  • Spoon a tablespoon each into muffin moulds, put some chocolate chips on top and bake at 180 C for 18 to 20 minutes or till a toothpick inserted in the center comes out clean.

  • Let them cool for 5 minutes in the mould then transfer on a wire rack to cool completely.

  • Have it immediately or store in an airtight container for up to 2 days. They taste best the day they are made.

Here is how to make it step by step:

Shift dry ingredients, mash bananas, cream butter and sugar. Mix banana and vanilla essence.

Mix egg in the batter. Then in two batches add flour and milk alternately. And mix till everything comes together.

When batter is ready pour in the muffin mold put some chocolate chips on top and bake in a pre heated oven at 180 c.

Your Banana chocolate chip muffins are ready to enjoy. They taste best the day they are made. But once they are cool completely you can store them in an air tight container up to 2 days.

Recipe note:

  • You can use nuts of your choice in place of chocolate chips to make it banana nut muffin.

  • If you like your muffins very sweet can add up to 1 cup sugar. 3/4 cup works fine for me as over ripe bananas are also very sweet.

  • To give it a healthy twist use whole wheat flour or 50-50 whole wheat flour and maida.

  • Every oven is different so the baking time may vary little.

  • The cup size may vary so I will recommend the weighing method. In case you don't use scale measure dry ingredients carefully. Using too much dry ingredients is the most common mistake while baking.
